These bar cookies are prepared easily in one bowl, combining flaked coconut, walnuts and raisins in a buttery cookie dough. With 31% fewer calories than the traditional recipe, they'll be a favorite.

Coconut Raisin Bars

2 large eggs, slightly beaten
1 cup Equal® Spoonful*
6 tablespoons stick butter, melted
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup toasted flaked coconut
1/2 cup chopped walnuts
1/2 cup seedless raisins
  1. Beat eggs and Equal® in medium bowl. Mix in butter and vanilla. Stir combined flour, baking powder and salt into egg mixture. Mix in coconut, nuts and raisins. Spread batter in lightly sprayed 8-inch square pan.
  2. Bake in preheated 350°F oven 18 to 20 minutes or until wooden pick inserted in center comes out clean and top is golden. Cool completely on wire rack. Cut into bars.
  3. Store in airtight containers at room temperature.

Makes 16 bars.

* May substitute 24 packets Equal sweetener
