Traditional oil and vinegar style cole slaw with the addition of red and green peppers. Use packaged shredded cabbage to make preparation even easier.

Coleslaw

1 small head cabbage (1 pound), thinly sliced
1/2 cup chopped green bell pepper
1/2 cup chopped onion
2 tablespoons chopped pimiento or red bell pepper
1/2 cup cider vinegar
3 tablespoons vegetable oil
1/2 cup Equal® Spoonful*
1 teaspoon celery seed
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/8 teaspoon ground black pepper
  1. Combine cabbage, green pepper, onion and pimiento in medium bowl.
  2. Whisk together remaining ingredients. Toss dressing and vegetable mixture to coat. Refrigerate, covered, at least 2 hours to allow flavors to blend

Makes 12 servings.

* May substitute 12 packets Equal sweetener
