Date Bran Muffins (Diabetic)
- 1 1/2 cups 100% bran cereal
1 1/2 cups skim milk
1/3 cup margarine, melted
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
4 1/4 teaspoons Equal® for Recipes or 14 packets Equal® sweetener or 1/2 cup plus 4 teaspoons Equal® Spoonful
1 tablespoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoons salt
1/2 cup pitted dates, chopped
- Combine cereal and milk in medium bowl; let stand 5 minutes.
- Stir in margarine, egg, and vanilla. Add combined flour, Equal®, baking powder, cinnamon and salt stirring just until mixture is blended. Stir in dates.
- Spoon batter into greased muffin pans; bake in preheated 375*F (190*C) oven until muffins are browned and toothpicks inserted in centers come out clean, 20 to 25 minutes. Cool in pans on wire rack 5 minutes; remove from pans and cool on wire rack.
Makes 1 dozen.
