Serve these hearty squares on a bed of shredded iceberg lettuce and with a side of salsa and sour cream as an entrée, or cut into smaller pieces and serve as an appetizer.

Beef Tamale Squares

1 (8.5-ounce) package corn muffin mix
1 1/2 cups water
2 large eggs
1 tablespoon chili powder
1/2 pound ground beef, cooked and drained
1 (16-ounce) jar ORTEGA Salsa - Homestyle Recipe (Mild)
2 cups shredded cheddar cheese, divided use
1 cup frozen corn, thawed
1 cup shredded iceberg lettuce
  1. Preheat oven to 450°F (230°C). Lightly grease 12 x 8-inch baking dish.
  2. Combine muffin mix, water, eggs and chili powder in medium bowl; add beef, salsa, 1 cup cheese and corn. Place into prepared baking dish.
  3. Bake for 20 minutes; top with remaining cheese. Bake for an additional 5 minutes or until knife inserted near center comes out clean. Let stand for 10 minutes before serving. Serve over lettuce.
