This Creole-flavored dish is half-burger and half-sandwich -- but it's all good!

Creole Burgers on French Bread

1 tablespoon olive oil
1 onion, chopped
1 green bell pepper, seeded chopped
2 celery ribs, thinly sliced
2 tablespoons Creole spice mix (to make your own, see
Creole Seasoning I or Creole Seasoning II)
1 pound lean ground beef
4 French bread rolls, halved
  1. Preheat grill.
  2. Heat the oil in a large nonstick skillet over medium-high heat. Add onion, bell pepper, celery and Creole spices. Sauté until vegetables are soft, about 5 minutes. Remove from heat and let cool for 10 minutes.
  3. Combine with ground beef in a large bowl. Form into 4 oval-shaped patties (same size as bread). Grill 4 minutes per side, or until no longer pink in the center. Place burgers on rolls and garnish with desired condiments.

Makes 4 servings.
