Mama's Meatloaf
Comforting, delicious meatloaf just like Mama use to make, only made leaner with the use of ground chicken or turkey.
Recipe Ingredients:
1 pound PERDUE® Fresh Lean Ground Turkey or Ground Chicken
2 large eggs, slightly beaten
1 (8-ounce) can tomato sauce - divided use
2/3 cup finely chopped onion
1/3 cup dry bread crumbs
1 clove garlic, minced
1/2 teaspoon lemon pepper seasoning
2 tablespoons Dijon mustard
Cooking Directions:
- Preheat oven to 350°F (175°C). In a large bowl, combine all of the ingredients except the mustard and 1/2 cup of the tomato sauce. Mix well. Shape into a loaf and place in shallow baking dish.
- Spread mustard over top of meatloaf and bake for 80 to 90 minutes, or until meat thermometer inserted in center registers 170°F (76.6°C). During last 20 minutes of baking, baste meatloaf with remaining 1/2 cup tomato sauce.
- Allow to stand at room temperature for 5 minutes before slicing.
Makes 8 servings.
