No-Work Meatloaf
Mashed beans economically provide extra protein and fiber in this satisfying and wholesome meatloaf. And remember, leftover meatloaf makes wonderful sandwiches cold or hot.
Recipe Ingredients:
2/3 cup cooked and mashed Navy, Great Northern, or Yellow-Eye Beans (or a 15.5-ounce can, drained, rinsed and mashed)
1 pound lean ground beef
1 cup tomato ketchup
1/2 cup saltine cracker crumbs or bread crumbs
Cooking Directions:
- Mix all the ingredients together well. Put the mixture in a bread pan, or shape into a loaf and place in a shallow baking dish.
- Bake in a preheated oven at 350°F (175°C) for 45 minutes.
- Serve with cooked rice.
