This is a perfect side dish for a crowd
or add a warm, crusty loaf of bread and your favorite prepared
salad for a complete and satisfying meal.
Sausage and
Green Chile Pilaf
- 3 tablespoons butter or
margarine
1 pound sliced mushrooms
1 cup diced onion
1 1/2 pounds bulk sausage, cooked and drained
4 (10.5-ounce) cans chicken broth
2 cups uncooked rice
1 (7-ounce) can ORTEGA® Diced Green Chiles
2 teaspoons chili powder
1 teaspoon ground cumin
- PREHEAT oven to 350°F
(175°C). Lightly grease 13 x 9-inch baking dish.
- MELT butter in large skillet;
cook mushroom and onion until tender. Add sausage, broth, rice,
chiles, chili powder and cumin. Transfer to prepared baking dish;
cover.
- BAKE for 55 to 60 minutes
or until rice is cooked and tender.
