Savory Supper Meatballs

Savory Supper MeatballsThese meatballs are fun and easily made in a muffin tin. Kids can help make them as part of a family dinner.

Recipe Ingredients:

1 pound ground pork
1/4 cup chopped onion
1 large egg
1/2 cup quick oatmeal
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 teaspoons mustard
1/2 cup milk
3 to 4 tablespoons ketchup

Cooking Directions:

  1. Preheat oven to 350°F (175°C).
  2. Put pork in a large bowl, add all other ingredients except ketchup. With clean hands, mix together all ingredients thoroughly—this will take a few minutes to make sure everything is well blended.
  3. Spoon equal portions into 8 muffin cups. Top each muffin with a teaspoon or so of ketchup.
  4. Bake for 25 minutes. Serve warm with more ketchup if desired.

Makes 4 (2 meatball) servings.
