Triangle Tacos
These tasty mini taco triangles are a quick and easy version of empañadas, a Mexican pastry turnover usually filled with a savory meat and vegetable filling. Serve on a bed of shredded lettuce and top with additional salsa and sour cream.
Recipe Ingredients:
1 (1.25-ounce) package Ortega Taco Seasoning mix
1 (16-ounce) jar Ortega Homestyle Salsa
3/4 pound ground beef, cooked, drained and crumbled
1/3 cup water
1 cup shredded cheddar or Monterey Jack cheese
1 (15-ounce) package refrigerated pie dough
Cooking Directions:
- Preheat oven to 450°F (230°C).
- Combine beef, taco seasoning, salsa and water in medium skillet; cook over medium heat for 5 to 7 minutes or until thickened. Stir in cheese.
- Cut each dough round into 6 wedges. For each triangle, place about 1/3 cup beef filling down center of dough wedge; top with another wedge of dough. Seal edges with fork; repeat to make 6 triangles. Place triangles on baking sheet.
- Bake for 20 minutes or until golden brown.
Makes 6 mini taco triangles.
