Crispy Marsmallow Eggs

1/4 cup butter
1 (10 1/2-ounce) package miniature marshmallows
Food coloring, any color
6 cups crisp rice cereal
  1. In large saucepan melt butter on low heat; add marshmallows and cook, stirring constantly, until marshmallows are completely melted. Remove from heat. Stir in desired food coloring.
  2. Add cereal and mix well.
  3. Grease hands with butter or cooking spray. Working quickly, shape cereal mixture into 18 oval shapes to resemble eggs. Cool completely. Store in tightly covered container, or individually wrapped in colorful plastic wrap, at room temperature.

Makes about 18 eggs.
