Lamb Tortellini Minestrone

1 pound ground lamb
4 cups water
2 1/2 cups beef broth
1 (8-ounce) can tomato sauce
1/4 teaspoon garlic powder
1 1/2 teaspoons Italian seasoning
8 ounces cheese tortellini
1 (16-ounce) package frozen mixed vegetables
1 (15-ounce) can kidney beans
  1. In a heavy skillet over medium high heat, brown ground lamb; drain and set aside.
  2. Bring water, beef broth and tomato sauce to a boil in a large saucepan over high heat. Add the browned lamb, garlic powder, Italian seasoning, tortellini, frozen vegetables and kidney beans; bring just to a boil, then reduce the heat to medium-low. Simmer, stirring occasionally, for 10 to 15 minutes or until the tortellini and vegetables are tender.

Makes 8 servings.
