Southwestern Style Chops

Recipe Ingredients:
Seasoning Blend:
2 tablespoons chile powder
1/4 teaspoon dried oregano, dried
Pinch ground cinnamon
1/4 teaspoon whole seed cumin
1/2 teaspoon salt
1/2 teaspoon crushed black pepper
1 cup beer - divided use
4 lamb chops
2 cups coarsely chopped onions
2 cloves garlic, chopped
4 tomatoes, whole, canned; coarsely chopped
Cooking Directions:
- Combine seasoning blend and 1/4 cup of beer into a paste. Coat the chops with the paste and marinate for 30 minutes.
- In a skillet, add 1 tablespoon olive oil, cook chops on both sides about 3 minutes per side. Remove chops; keep warm.
- In same skillet, sauté onions and garlic. Add chopped tomatoes and remaining beer, reduce sauce to thicken by gently boiling uncovered (6 to 8 minutes), stir occasionally. Serve with Chops.
