Caesar salad dressing combined with taco sauce turn ordinary tacos into a zesty luncheon fare bursting with flavor. Cheese, avocado, corn and green chiles form the basis for these tacos.
Caesar Salad Tacos
- 1 bunch romaine lettuce, torn
2 cups shredded cheddar cheese, divided use
1 avocado, pitted, peeled and diced
1 (4-ounce) can ORTEGA® Diced Green Chiles
1/2 cup canned black beans, drained and rinsed
1/4 cup frozen whole kernel corn, thawed
1/3 cup Caesar salad dressing
1/4 cup ORTEGA Taco Sauce
1 (12-count) package ORTEGA® Taco Shells, warmed
2 cups diced tomato
- Combine lettuce, 1 cup of the cheese, avocado, chiles, beans and corn in a large bowl.
- Combine dressing and taco sauce in a small bowl; mix well. Pour over lettuce mixture; toss well to coat.
- Fill each taco shell with salad mixture; top with remaining cheese and tomatoes.
Makes 6 servings.
