Fresh plum tomatoes, pasta and mozzarella cheese tossed with herbs and spices are a true taste of Italy. Serve with a warm loaf of crusty French bread and a fresh green salad.

Plum Tomatoes with Fettuccine and Mozzarella

1 (9-ounce) package BUITONI® Fettuccine
1 pound plum tomatoes, chopped
3/4 cup shredded mozzarella cheese
1/4 cup extra virgin olive oil
2 cloves garlic, minced
1/8 teaspoon red pepper flakes
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon freshly grated Parmesan cheese
  1. COMBINE tomatoes, mozzarella cheese, oil, garlic, red pepper flakes, basil and parsley in a medium bowl. Let stand for 10 minutes.
  2. PREPARE pasta according to package directions. Toss pasta with tomato mixture. Top with Parmesan cheese.
