Daiquiri Lime Pie

No recipe image available.An easy, rum-spiked, sweet-tart lime custard pie.

Recipe Ingredients:

3 large eggs
1 (14-ounce) can sweetened condensed milk
1/3 cup lime juice
1/4 cup rum
1 (9-inch) baked pie shell

Cooking Directions:

  1. Preheat oven to 350°F (175°C).
  2. Separate eggs and beat the yolks until pale yellow. Add sweetened condensed milk, lime juice, and rum; beat until smooth.
  3. In another bowl, beat the egg whites until stiff. Fold into the lime mixture. Spoon into baked pie shell.
  4. Bake for 8 to 10 minutes.
  5. Cool, then chill.

Makes 8 servings.
