An easy pumpkin pie sweetened with honey and enriched with evaporated milk. Serve with a dollop of freshly whipped cream.

Honey-Sweetened Pumpkin Pie

1 (15-ounce) can pumpkin puree
1 cup evaporated milk
2 large eggs
1/4 cup honey
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 (9-in.ch unbaked pie crust
  1. Preheat the oven to 375°F.
  2. In a large bowl, whisk together pumpkin, skim milk, eggs, honey, cinnamon, nutmeg and cloves until well blended.
  3. Pour into unbaked pie crust.
  4. Bake for 50 to 60 minutes, or until a knife inserted in the center comes out clean.
  5. Cool thoroughly on wire rack before slicing. Store in the refrigerator.

Makes 8 servings.
