Strawberry Cream Pie
- 2 (3-ounce) packages cream cheese
2 pints strawberries
3 tablespoons cornstarch
1 cup granulated sugar
1 teaspoon lemon juice
1 cup heavy cream
1 (9-inch) baked pie shell
- Prepare a 9-inch baked pie shell according to the package directions. Cool.
- In a bowl beat cream cheese with an electric mixer on medium speed until smooth. Line the 9' pie shell with the cream cheese. Clean and halve 1 pint of strawberries. Arrange on top of the cream cheese.
- In a saucepan combine 1 pint of crushed strawberries with cornstarch, sugar, and lemon juice. Cook over medium heat until mixture thickens. Cool and pour over the raw berries. Chill until set.
- Garnish with whipped cream.
Makes 8 servings.
