Bring on the grilling season! These spicy thick chops are a great way to get family to the dinner table. Also good on camping trips. Serve with Roasted Potato Dippers and grilled summer squash.

Cajun-Style Spiced Pork Chops

4 to 6 bone-in pork chops, about 1 1/2-inch thick
1 tablespoon paprika
2 1/2 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cayenne
3/4 teaspoon white pepper
3/4 teaspoon black pepper
3/4 teaspoon dried thyme
3/4 teaspoon oregano
  1. Mix all ingredients except pork and store in an airtight container.
  2. Rub chops with rub.
  3. Prepare medium-hot fire and grill chops over indirect heat for 6 to 8 minutes on each side.

Serves 4 to 6.
