Leftover Easter Dinner Cakes

 
2 cups mashed potatoes
1 1/2 cups cooked ham, ground up
2 tablespoons fresh parsley
2 teaspoons chopped onion
1 egg yolk
Salt and pepper to taste
1/4 cup all-purpose flour
Vegetable oil or butter for frying (or combination of both)
  1. Combine all ingredients, except flour, in bowl and mix well.
  2. Shape mixture into cakes and dip into flour to cover all sides.
  3. Heat oil in large skillet and fry cakes until golden brown on both sides.

Serves 6.
