Serve with wilted spinach salad and wild rice blend

Mandarin Pork Roast

2-pound boneless loin roast
1/4 cup orange marmalade
1 can (8 ounces) mandarin oranges, drained
  1. Place roast in shallow pan, coat with marmalade and place in preheated 325 degree F. oven. Roast until meat thermometer reads 155-160 degrees F.
  2. Let roast rest 5 to 10 minutes before slicing. Garnish servings with mandarin oranges.
