A healthy and delicious dinner using fresh mangoes. Serve with rice tossed with cashews and steamed asparagus.

Molasses Roasted Tenderloin with Minted Mango Relish

2 pork tenderloins, about 1 pound each
1/3 cup orange juice
2 tablespoons molasses
1 tablespoons grated fresh ginger
1 teaspoon ground coriander
 
Minted Mango Relish:
1 mango, peeled and diced
2 tablespoons chopped fresh mint
2 tablespoons dried cranberries
1 tablespoon seasoned rice vinegar
1/4 teaspoon crushed red pepper
  1. In heavy-duty resealable plastic bag, combine all ingredients except Relish; seal bag and refrigerate for 4 to 24 hours.
  2. Remove pork from marinade and place in shallow roasting pan. Discard marinade.
  3. Roast pork in a 450 degrees F. oven for 20 to 25 minutes, until internal temperature reads 155 degrees F. Remove pork from oven; let rest for 5 minutes before slicing to serve with Minted Mango Relish.
  4. Minted Mango Relish: In small bowl, stir together diced mango, mint, cranberries, rice vinegar and 1 crushed red pepper.
