Mustard-Crusted Pork Roast
Simple elegance—pork roast wearing a mustard and garlic crouton crumb coating. Serve with buttered broccoli spears, a green salad and hot French bread.
Recipe Ingredients:
1 (2-pound) boneless pork roast
Kosher or sea salt and freshly ground black pepper, to taste
2 tablespoons Dijon mustard
1 cup garlic croutons
Cooking Directions:
- Preheat oven to 400°F (205°C).
- Season roast with salt and pepper; place in shallow pan and roast for 20 minutes.
- Meanwhile, place croutons in plastic bag, roll with rolling pin until crushed.
- Remove roast from oven; spread surface with mustard and sprinkle with crouton crumbs. Return to oven and continue to roast for 10 to 15 minutes longer, until meat thermometer reads 150°F to 155°F (approximately 65°C).
Makes 4 to 6 servings.
