This dish can be made for a quick weekday meal with wild rice mix and steamed snow peas.

Plum-Glazed Pork Cutlets

1 pound boneless pork leg cutlets, 1/2-inch thick
1 teaspoon vegetable oil
1 (8-ounce) jar plum jelly or preserves
1/2 onion, chopped
1/4 cup wine vinegar
2 teaspoons soy sauce
1 teaspoon ground ginger
  1. Heat oil in nonstick skillet over medium-high heat. Brown pork on both sides. Add remaining ingredients, cover and simmer 10 to 12 minutes.
