Simple Asian-inspired dish that uses frozen vegetables so there is not chopping involved. Serve with eggrolls, fried rice and hot tea.
Pork and Noodle Stir-Fry
- 1 pound pork tenderloin, cut into stir-fry strips
1 teaspoon vegetable oil
1 (16-ounce) package frozen Oriental vegetable combination
2 (3 1/2-ounce) packages ramen noodles, broken into pieces*
1 1/2 cups water
3 tablespoons soy sauce
1 1/2 teaspoons dark Oriental sesame oil
1 tablespoon toasted sesame seeds, if desired
- Heat oil over medium-high heat in large nonstick skillet. Add pork; stir-fry about 5 minutes or until pork is lightly browned.
- Add remaining ingredients except sesame seeds. Heat to boiling. Reduce heat. Simmer 4 to 5 minutes, stirring occasionally, until noodles are completely softened and vegetables are crisp-tender.
- Sprinkle with sesame seeds, if desired, before serving.
Serves 4.
*Note: Save seasoning packets from noodles for another use or discard.
