Pork Chops with Pears and Blue Cheese

1 1/4 pounds pork chops
1 tablespoon vegetable oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 pears
2 tablespoons butter
1 tablespoon peppercorns, crushed
1/4 cup crumbled blue cheese

  1. Heat a skillet over medium-high heat and cook pork chops in oil until browned. Season with salt and pepper; remove and keep warm.
  2. Cut unpeeled pears in half then slice into 1/8-inch pieces.
  3. Melt butter in the skillet and cook the pears for 1 minute, stirring gently. Stir in crushed peppercorns and cook, stirring constantly until the pears are tender, about 2 minutes. Serve over the pork chops and sprinkle with crumbled blue cheese.

Makes 4 servings.
