Beef and Peach Salad

Recipe Ingredients:
1 1/2 pounds Certified Angus Beef ® shoulder center steak
1/4 cup lemon juice
1 cup low-fat lemon yogurt
1/4 cup thinly sliced green onion
Mixed salad greens
5 peaches, washed and sliced
Salt and ground black pepper, to taste
1/2 teaspoon poppy seeds
2 teaspoons olive oil
Cooking Directions:
- Rub steak with oil, salt and pepper.
- Grill over medium heat for 12 to 16 minutes for medium doneness, leaving grill lid open.
- Transfer steak to a cutting board, and let it rest 10 minutes Cut steak across the grain into thin slices.
- Meanwhile, combine yogurt, lemon juice, onion, and poppy seed in a bowl. Arrange steak and peach slices on salad greens, and drizzle dressing over top.
