Beef Tenderloin & Greens Dijon
This entrée salad is ready to serve in just minutes thanks to the convenience of ready-to-use packaged salad greens, quick stir-fried beef and a simple, freshly made dressing. If you want to save even more time, use your favorite bottled dressing instead. Serve with warm, crusty sourdough rolls and a refreshing glass of iced tea or lemonade for an easy light supper, especially during the dog days of summer!
Recipe Ingredients:
1 pound beef tenderloin tips
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 (8 to 10-ounce) package European salad greens
Croutons
Dijon Dressing:
1/2 cup olive oil
1/4 cup Dijon-style mustard
1/4 cup balsamic vinegar
1 clove garlic, minced
1 teaspoon granulated sugar
1/4 teaspoon ground black pepper
Cooking Directions:
- Whisk dressing ingredients in medium bowl until creamy. Cut beef tenderloin tips into 1 x 1/2-inch pieces.
- Heat oil in large nonstick skillet over medium-high heat until hot. Add 1/2 of beef; stir-fry 2 to 3 minutes or until outside surface of beef is no longer pink. Remove. Repeat with remaining beef. Season with salt and pepper.
- Toss greens with 1/2 cup dressing in large bowl; place on platter. Top with beef and croutons. Serve with remaining dressing.
