California Plum and Quinoa Salad

Recipe Ingredients:

1 1/4 cups quinoa
2 1/2 cups water
2 fresh California plums, pitted and diced
1/2 cup chopped, toasted walnuts
1/4 cup chopped red bell pepper
1/4 cup chopped yellow bell pepper
1/4 cup sliced green onions
3 tablespoons flax oil
3 tablespoons extra virgin olive oil
1/4 cup white wine vinegar
1 1/2 tablespoons honey
1/4 teaspoon salt

Cooking Directions:

  1. Rinse quinoa and drain well. Add to boiling water; reduce heat and simmer, covered, for 12 minutes.
  2. Remove from heat and let stand for 5 minutes. Fluff with a fork and let chill for about 30 minutes.
  3. Stir together quinoa, plums, walnuts, peppers and onions in a medium bowl. Whisk together remaining ingredients in a small bowl and pour over salad; toss well to coat all ingredients with dressing.
  4. Cover and chill for 1 hour.

Makes 6 servings.
