Cottage Shrimp Salad

No recipe image available.Shrimp, celery, onion, crisp bacon crumbles and a spritz of lemon juice are combined with cottage cheese for a creamily delicious shrimp salad.

Recipe Ingredients:

7 ounces shrimp, cooked and drained
1 cup (8 ounces) low fat cottage cheese
1/4 cup minced celery
1/4 cup minced onion
4 slices bacon, crisply cooked, drained and crumbled
1 teaspoon lemon juice
1/8 teaspoon ground black pepper

Cooking Directions:

  1. Combine all ingredients in medium bowl. Mix until well blended. Cover and chill at least 1 hour. Serve over salad greens.

Makes 2 servings.
