Fast and Fabulous Bean Salad
An assortment of canned beans puts the fast in this bean salad recipe, the easy-to-make Tarragon Vinaigrette adds the fabulous.
Recipe Ingredients:
1 (14-ounce) can green beans
1 (14-ounce) can yellow beans
1 (19-ounce) can black beans
1 (12-ounce) can corn
1 white onion, sliced into rings
1 green pepper, seeded and sliced into rings
Tarragon Vinaigrette:
1/2 cup light olive oil
1/2 cup white vinegar
1/4 cup granulated sugar
1 teaspoon dry mustard
1 garlic clove, minced
1 teaspoon dried tarragon
1 teaspoon dried basil, crumbled
Cooking Directions:
- Drain and rinse green beans, yellow beans, black beans and corn. Mix in a large bowl.
- For Tarragon Vinaigrette: Whisk together light olive oil, vinegar, sugar, mustard, garlic, tarragon, and basil. Pour onto bean mixture prior to serving. Garnish with onion and green pepper rings.
