Granny Smith Confetti Coleslaw

4 cups chopped Granny Smith apples
2 tablespoons lemon juice
2 cups chopped cabbage
1 red pepper, chopped
2 green onions finely chopped
2 tablespoons chopped sweet pickles (optional)
Confetti Slaw Dressing (recipe follows)
  1. Toss apples with lemon juice. Combine remaining ingredients in large bowl; toss to coat with Confetti Slaw Dressing.

Makes 6 to 7 servings.

Confetti Slaw Dressing:
1/4 cup yogurt
2 tablespoons sweet pickle juice
2 teaspoons Dijon mustard
1/2 teaspoon honey
1/4 teaspoon black pepper
1/8 teaspoon celery seed
  1. Combine all ingredients together, mixing well.

Makes about 1/3 cup.
