Grape Coleslaw
- Dressing:
- 2/3 cup mayonnaise
- 1 1/2 tablespoons fresh lime juice
- 1 1/2 tablespoons honey
- Salad:
- 1 small head cabbage, shredded (about 8 cups)
- 2 1/2 cups California seedless grapes
- 1 1/2 cups jicama, peeled and chopped
- 1/3 cup sweet red onion, minced
- Combine mayonnaise, lime juice and honey in a small bowl and stir until well blended. Combine cabbage, grapes, jicama and onion in a large bowl. Add dressing to salad and toss well. Refrigerate until ready to serve.
Makes 8 servings.
