This recipe for Green Goddess Dressing was extremely popular in the 1970's...and we're bringing back as a time-honored classic!

Green Goddess Dressing

1 avocado, peeled and pitted
1 cup mayonnaise
2 tablespoons green onion
1 garlic clove
1 tablespoon lemon juice
1 teaspoon tarragon, fresh or dried
5 anchovies
Salt and pepper, to taste
  1. In a KitchenAid blender, combine the avocado, mayonnaise, green onion, garlic, lemon juice, tarragon, anchovies, salt and pepper. Process until smooth, adding water if necessary.
  2. Chill for 24 hours before serving.

Makes about 2 cups.
