Grilled Asparagus Salad

Recipe Ingredients:

1 pound asparagus, tough ends removed
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/4 teaspoon coarsely ground black pepper
1 1/2 tablespoons lemon juice
2 teaspoons Dijon mustard
1 ounces thinly sliced red onion
1 cup California Ripe Olives, whole, pitted
2 tablespoons freshly grated Parmesan cheese

Cooking Directions:

  1. In a large bowl, toss asparagus spears with 1 tablespoon of oil. season with salt and pepper and grill over medium-high heat for 5 to 7 minutes*, turning to brown evenly. Reserve seasoning bowl for dressing.
  2. While asparagus is cooking whisk together remaining olive oil, lemon juice and mustard in seasoned bowl. Toss in red onions and set aside.
  3. Toss cooked asparagus with vinaigrette and California Ripe Olives. Transfer to serving plates and top with Parmesan cheese.

Makes 4 servings.

*Cooking time will vary based on thickness of asparagus spears.
