Low-Fat Thousand Island Dressing
All the flavor of the classic dressing with less fat.
Recipe Ingredients:
1/3 cup low-fat mayonnaise
2 tablespoons ketchup
2 tablespoons fresh lemon juice
2 tablespoons minced bell pepper
1 tablespoon minced onion
1 tablespoon minced fresh parsley leaves
1 tablespoon sweet pickle relish
Pinch of cayenne
1/4 cup water
Salt and freshly ground black pepper to taste
Cooking Directions:
- In a blender puree all ingredients until smooth, adding up additional water if necessary to thin to desired consistency.
- Cover and refrigerate. Keeps for 1 week.
Makes about 1 cup.
