Extraordinarily easy to make, extraordinary in taste!

Mixed Baby Greens with Easy Balsamic Vinaigrette

1/3 cup balsamic vinegar
2 teaspoons packed dark brown sugar
2/3 cup extra virgin olive oil
Salt and freshly ground black pepper to taste
1 (12-ounce) package mixed baby greens
Freshly shaved Parmesan cheese for garnish*
  1. Whisk the balsamic vinegar and brown sugar together a small bowl (placed atop a damp towel to stabilize) until sugar has dissolved. Slowly pour in the olive oil in a small stream while whisking constantly until all has been incorporated and the vinaigrette is emulsified. Season to taste with salt and pepper.
  2. Toss baby greens with just enough dressing to lightly coat leaves.
  3. To served sprinkle with Parmesan shavings and offer additional vinaigrette according to personal preference.
  4. Refrigerate unused vinaigrette.

Makes 4 servings.

*Use a vegetable peeler.
