Fresh cucumbers get a new spin for a ethnic twist.

Sesame Cucumbers

1 large cucumber, peeled
1/2 yellow onion
3 tablespoons vegetable oil
1 teaspoon sesame oil
1 teaspoon granulated sugar
4 tablespoons seasoned rice vinegar
Pinch crushed red pepper flakes
Fresh cilantro, chopped (optional)
  1. Slice cucumber in half lengthwise and remove seeds. Thinly slice and place in shallow serving bowl.
  2. Thinly slice onion and toss with cucumber.
  3. In small bowl, stir together vegetable oil, sesame oil, sugar, seasoned rice vinegar and pinch of crushed red pepper.
  4. Drizzle dressing over cucumbers and onions. Garnish with chopped fresh cilantro.

Makes 4 servings.
