Slim Cottage Cheese Shrimp Salad

No recipe image available.A delicious and satisfying, creamy cottage cheese and shrimp salad with bits of crisply cooked bacon.

Recipe Ingredients:

6 to 8 ounces cooked and drained shrimp
1 cup lowfat cottage cheese
1/4 cup minced celery
1/4 cup minced onion
4 slices bacon, crisply cooked, drained and crumbled
1 teaspoon lemon juice, or to taste
1/8 teaspoon ground black pepper

Cooking Directions:

  1. Combine all ingredients in medium bowl. Mix until well blended. Cover and chill at least 1 hour. Serve over salad greens.

Makes 2 servings.
