A tart citrus dressing livens up ham tossed with vegetables and greens for an early-spring supper. Serve with warm dinner rolls or corn muffins.

Spicy Wilted Salad with Ham

3/4 pound ham thinly sliced and cut into strips
4 cups torn lettuce (leaf or iceberg)
2 cups chopped fresh spinach
1 cup cherry tomatoes, halved
1/2 cup orange juice
3/4 teaspoon chili powder
1/4 teaspoon crushed red pepper flakes
1 tablespoon white wine vinegar
2 tablespoons vegetable oil
  1. Thaw packaged vegetables in cool water.
  2. In large bowl toss together vegetables, lettuce, spinach and tomatoes.
  3. In small saucepan, bring orange juice, chili powder and crushed pepper to a boil; stir in vinegar and oil and stir to blend.
  4. Pour dressing over salad; toss well and serve immediately.
