Spinach Salad with Apple and Onion

1/4 cup extra virgin olive oil
2 tablespoons apple cider vinegar
2 tablespoons honey
1 teaspoon stone ground mustard
1 medium Golden Delicious apple, quartered, cored, and sliced or chopped
1/2 small red onion, thinly sliced, soaked in cold water for 10 minutes and drained thoroughly
1 (10-ounce) package triple-washed spinach, de-stemmed if needed
Salt and freshly ground black pepper
  1. Whisk together the oil, vinegar, honey, and mustard in the bottom of a large salad bowl. Add the prepared apple and onion to the dressing and toss to coat well.
  2. When ready to serve salad, add the spinach, tossing gently just until leaves are glistening with dressing. Season to taste with salt and pepper.

Makes 4 servings.
