Walnuts roasted in soy
sauce give this salad its crunch.
Spinach,
Orange and Walnut Salad
- 12 ounces spinach, washed,
trimmed and dried (1 bunch)
2 navel oranges
1/3 cup walnuts, coarsely chopped
2 tablespoons soy sauce
Dressing:
1/4 cup cider vinegar
1/4 cup olive oil
1 tablespoon honey
1 teaspoon poppy seeds
1/4 teaspoon salt
1/4 teaspoon black pepper
- Mix soy sauce and walnuts
and roast for 15 minutes at 350°F or until golden.
- Peel oranges and slice
crosswise in 1/4 inch slices, and then cut in fourths.
- Mix spinach greens, torn
into smaller pieces, oranges and walnuts.
- Mix salad dressing in
the blender. Toss dressing and spinach mixture together and serve.
Makes 4 servings.
