Classic spinach salad gets a face lift with sweet-and-sour sauce as the key ingredient. Oranges, strawberries, mushrooms and bacon all get into the act.

Sweet and Sour Spinach Salad

2 pounds (6 cups) spinach, rinsed, stemmed and chopped
8 ounces bacon, cooked and crumbled
1/2 pound (1 1/2 cup) mushrooms, trimmed and sliced
2 cups sliced hulled strawberries
4 hard-cooked eggs, peeled and sliced
1 onion, peeled and thinly sliced
1 cup bottled sweet-and-sour sauce
1 (11-ounce) can Mandarin orange sections, drained
  1. Combine spinach, bacon, mushrooms, strawberries, eggs, onion, sweet-and-sour sauce and mandarin oranges in a large salad bowl; toss lightly. Serve immediately.

Makes 12 servings.
