Sweet Pea Salad
- 2 tablespoons scallions, chopped
- 1/4 cup celery hearts, chopped
- Black pepper to taste
- 4 tablespoons crushed pineapple, drained well
- 1/2 cup sharp cheddar cheese, cubed
- 1/3 cup mayonnaise
- Dill weed, to taste
- 1 (15-ounce) can peas, drained
- Thoroughly mix scallions, cheese, celery, mayonnaise, pepper and dill. Gently add peas. Add pineapple last. Refrigerate. Please, do not over stir those tender peas!
Makes 6 servings.
