Sweets 'n Nuts Slaw
- 2 cups shredded raw SweetPotatoes
- 1 cup diced apples
- 1 tablespoon lemon juice
- 1/2 cup thinly sliced celery
- 1/2 cups raisins
- 1/3 cup sunflower seeds or toasted slivered
almonds
- 2 tablespoons chopped parsley
- 1/3 cup reduced fat mayonnaise
- In bowl, toss SweetPotatoes with ice water.
Let stand several minutes; drain.
- In serving bowl, toss apples with lemon
juice. Add SweetPotatoes and remaining ingredients; blend well.
Chill until ready to serve.
