Sweets 'n Nuts Slaw

2 cups shredded raw SweetPotatoes
1 cup diced apples
1 tablespoon lemon juice
1/2 cup thinly sliced celery
1/2 cups raisins
1/3 cup sunflower seeds or toasted slivered almonds
2 tablespoons chopped parsley
1/3 cup reduced fat mayonnaise
  1. In bowl, toss SweetPotatoes with ice water. Let stand several minutes; drain.
  2. In serving bowl, toss apples with lemon juice. Add SweetPotatoes and remaining ingredients; blend well. Chill until ready to serve.
