"Terra Cotta" Grilled Chicken Salad

1 cup grilled chicken breast, sliced into 1/2-inch strips
3/4 cup mild chili pepper, thinly sliced
3/4 cup red onion, thinly sliced
3/4 cup tomato, diced
3/4 cup cooked beans (kidney, pinto or black beans)
3/4 cup jicama, diced
1 tablespoon fresh cilantro, minced
1 cup ranch-style, creamy salad dressing
1 tablespoon catsup
Dash salt
Dash hot sauce
Juice of 1 lime
Cilantro sprigs for garnish, if desired
  1. In a large bowl, combine chicken, mild chili, red onion, tomato, beans, jicama and minced cilantro; add lime juice and toss to mix thoroughly.
  2. In a small bowl, mix together Ranch style creamy salad dressing, catsup, salt and hot sauce. Pour over salad ingredients, tossing to coat thoroughly. If desired, garnish with cilantro sprigs.

Makes 4 to 6 servings.
