Juicy orange slices and crisp red onions perk up leftover turkey for a delicious light salad.

Turkey Salad with Orange and Red Onion

1/4 cup orange juice
3 tablespoons vegetable oil
3 tablespoons red wine vinegar
1/2 teaspoon garlic powder
1/2 teaspoon orange zest
1 orange, peeled, pithed and sliced crosswise
1 cucumber, peeled, seeded and sliced
1/2 red onion, peeled and chopped
1 head lettuce, torn
1 cup chopped cooked turkey
  1. Whisk together orange juice, oil, vinegar, garlic powder and orange zest; set aside.
  2. In a large bowl, combine orange slices, cucumber, and onion. Pour on dressing and toss gently. Serve on bed of lettuce leaves and top with turkey.

Makes 4 servings.
