Waldorf Salad with California Raisins

Recipe Ingredients:
1/2 cup mayonnaise
1/4 cup vanilla yogurt
1 1/2 tablespoons granulated sugar
2 tablespoons (1 ounces) rice vinegar
1 tablespoon chopped chives
1 tablespoon minced gingerroot
1/2 cup California natural raisins
1/2 cup California golden raisins
2 Red Delicious apples, cored and cut into 1/2-inch dice
2 Granny Smith apples, cored and cut into 1/2-inch dice
20 leaves romaine heart
1 cup buttermilk blue cheese, crumbled
20 glazed walnuts
1 cup chervil sprigs
Light molasses, for drizzle
1/2 cup snipped chives; for garnish
Cooking Directions:
- Combine mayonnaise, yogurt, sugar, vinegar, chives and gingerroot in mixing bowl; mix until sugar is dissolved.
- Fold in raisins and diced apples. Cover tightly and chill thoroughly.
- To serve, arrange 5 Romaine leaves on each of 4 long rectangular chilled plates. Divide and spoon on enough apple raisin mixture to fill each leaf.
- Sprinkle with crumbled blue cheese and walnuts. Top each with chervil sprigs, drizzle with molasses and sprinkle with chives.
