Wilted Spinach with Apples and Feta Cheese

8 cups torn spinach
1/4 cup sliced green onions
4 slices bacon
4 tablespoons cider vinegar
1 1/2 teaspoons sugar
1/2 teaspoon dry mustard
1 cup sliced or chopped apple
1/3 cup crumbled feta cheese
2 hard-cooked eggs
  1. In a large bowl combine the spinach and green onions; set aside.
  2. In a large skillet cook the bacon over medium heat until crisp. Remove the bacon, reserving 2 tablespoons of the drippings in skillet. Drain bacon on paper towels; crumble and set aside.
  3. Carefully stir vinegar, sugar, and mustard into reserved drippings; bring just to boiling. Add apple and cheese. Toss lightly and transfer to a serving bowl.
  4. Remove the yolk from the hard-cooked egg; press yolk through a sieve. Chop the egg white. Sprinkle salad with egg yolk and white and bacon. Serve immediately.

Makes 4 to 6 servings servings.
