Wilted Spinach with Apples
and Feta Cheese
- 8 cups torn spinach
- 1/4 cup sliced green onions
- 4 slices bacon
- 4 tablespoons cider vinegar
- 1 1/2 teaspoons sugar
- 1/2 teaspoon dry mustard
- 1 cup sliced or chopped apple
- 1/3 cup crumbled feta cheese
- 2 hard-cooked eggs
- In a large bowl combine the spinach and
green onions; set aside.
- In a large skillet cook the bacon over
medium heat until crisp. Remove the bacon, reserving 2 tablespoons
of the drippings in skillet. Drain bacon on paper towels; crumble
and set aside.
- Carefully stir vinegar, sugar, and mustard
into reserved drippings; bring just to boiling. Add apple and
cheese. Toss lightly and transfer to a serving bowl.
- Remove the yolk from the hard-cooked egg;
press yolk through a sieve. Chop the egg white. Sprinkle salad
with egg yolk and white and bacon. Serve immediately.
