Wilted Spinach with Apples and Feta Cheese
Wilted spinach salad with green onions, apple and crumbled feta tossed in a warm apple cider vinaigrette and garnished with bacon crumbles and chopped hard-boiled egg.
Recipe Ingredients:
8 cups torn spinach
1/4 cup sliced green onions
4 slices bacon
4 tablespoons cider vinegar
1 1/2 teaspoons granulated sugar
1/2 teaspoon dry mustard
1 cup sliced or chopped apple
1/3 cup crumbled feta cheese
2 hard-boiled eggs
Cooking Directions:
- In a large bowl combine the spinach and green onions; set aside.
- In a large skillet cook the bacon over medium heat until crisp. Remove the bacon, reserving 2 tablespoons of the drippings in skillet. Drain bacon on paper towels; crumble and set aside.
- Carefully stir vinegar, sugar, and mustard into reserved drippings; bring just to boiling. Add apple and cheese. Toss lightly and transfer to a serving bowl.
- Remove the yolk from the hard-boiled egg; press yolk through a sieve. Chop the egg white. Sprinkle salad with egg yolk and white and bacon. Serve immediately.
Makes 4 to 6 servings.
