Griddled Mozzarella and Tomato Sandwiches

8 large slices of country French bread
1/4 cup olive oil
16 slices of mozzarella cheese
3 Roma tomatoes, cut into 4 slices each
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/4 bunch of basil
  1. Lightly brush both sides of bread with olive oil. Place 2 slices of mozzarella on piece of bread. Top with 3 slices of tomato, salt, pepper and 1/4 of the basil. Top with 2 more slices of cheese and second piece of bread. Repeat to make 3 more sandwiches.
  2. Heat a large non-stick skillet over medium-high heat. Add the sandwiches and cook, pressing down with a spatula, for 4 minutes. Turn over and continue to cook until golden and cheese is melted, about 4 more minutes. Serve immediately.

Makes 4 servings.
